Stuffed Squash

This week is flying by! I love when holidays fall in the middle of the week! It always makes the time go by faster. It took me a minute to remember it was even Thursday!

This morning I headed to GPP for work. We did this awesome ab workout!

After I did part of this workout, I went to a body combat class while the kids were still at pre-school.

I picked the kids up and came home and made breakfast. I had a strawberry quest bar earlier in the morning and by the time I got to breakfast it was pretty much lunch… and I was hungry!

I had an egg sandwich topped with cinnamon and maple syrup.

I had a couple clementine's as well! I can’t get enough of these babies lately!

I got to work preparing some squash for future meals and seriously, I think cutting the squash should count as a second workout sometimes!

I baked a butternut and acorn squash in the oven on 425 for 45 minutes.

I took an acorn squash and filled it with some peanut butter protein sauce and topped it with cinnamon and sugar free maple syrup.

Yes. I am on a kick lately.

Peanut Butter Protein Sauce

  • 2 tbs PB2
  • 1 scoop of vanilla protein powder!
  • Mix with water until desired consistency is achieved.

I ordered this scuba from Lulu lemon a few days ago and just got it in the mail today! I couldn’t pass up a good deal! Scubas went on sale last weekend for half price! Although, I did think it was white and green its actually gray and green. Oh well… still cute.

I taught a 8:00pm Boot camp class tonight, I’ll post the workout tomorrow!

On another random note, here is a fun Tanner fact. He will and wants to watch this track with Jeeps going around and around all day. He even falls asleep doing so.

I just love that little man!

What is your favorite winter squash?
