PB Protein Bars

Hey guys! Long time no chat!

I have a yummy recipe from a friend comin’ atcha!

I have been a little MIA this week! It has been a busy week! We have spent lots of time at the pool and in the gym. I have great excuses.. but really I have been working and playing so much that by the end of the day, I’m totally ready for bed! I love to be out and active all day and I think my kids love it just as much!

What good is our fitness if we don’t use it?

These two are starting to LOVE the water! They are a little hesitate, but warm up pretty quick about it! They hated the water for a really long time. Now to just get them out on the boat…

I have also been getting a little extra cardio in everyday mostly in the form of trail running! Today, Tara and I did elephant rock.

The GPP workout today was a version of this one that I did with my boot camp class last week! It was ROUGH and I’m sure I’ll be feeling those thrusters in the morning during body pump..

Every trail run now reminds me of rim to rim… and how I really love not having blisters on my shoes.

I also get reminded of these awesome protein bars that my friend Sid brought to share! I actually had one for breakfast before heading down the north rim! I asked her to share the recipe and she said yes!

Sid is an amazing athlete! She has completed several marathons and half marathons, she is a mom to 3 beautiful little girls and she also loves eating healthy and GPP! I’m lucky to have her as a friend!

Anyway, these bars were awesome!

My whole family loves these bars!  They make a great pre or post workout snack or even a healthy treat!  So easy and so, so yummy!  I have also added chocolate chips to mine before and that is super yummy!  You can try all sorts of different variations!  I got this recipe from the wonderful Blonde Ponytail!  You can find the original recipe at: www.blondeponytail.com/2010/11/no-bake-peanut-butter-protein-bars/

Peanut Butter Protein Bars

  • 2 Cups Natural Peanut Butter
  • 1 1/4  honey  (I use organic raw local honey)
  • 2 cups vanilla protein powder (just use whatever protein you like best!, my favorite is plant fusion).
  • 1 cup oats
  • 1/4 cup chia seeds

Put the peanut butter and honey in a large microwave safe bowl.  Heat in microwave for approx 90 sec.  Stir until peanut butter and honey are well incorporated and nice and creamy.  

Add your protein powder, oats, and chia seeds.  Mix well.  Put mixture in a pan (13 X 9 is fine, just depends how thick you like your bars.  I put mine in an 11 X 7).  

Place pan in refrigerator for a couple hours until nice a firm.  Cut into bars and enjoy! (Store bars in the fridge.)
